ELDORADO

BELGIAN IPA / 7.5% / YEAR ROUND

Eldorado was our first commercial brew and has been our flagship ever since.
Eldorado is a Belgian IPA brewed with two yeast strains : a Belgian one to create a rich fruity and spicy aromatic profile and an American strain to ferment more sugars and dry out the beer.
It's then copiously dry hopped with Eldorado, Citra, Mosaic, Motueka and Simcoe hops to impart rich layers of fruity aromas, ranging from citrus and orchards to tropical fruits.

RYE 66

RYE IPA / 8.2% / SEASONAL

Inspired by the old school rye IPA (high bitterness, citrus) and updated with a heavy dry hop of Citra hops that bring tones of tropical fruits. The rye provide a solid malt backbone and silkiness.Brewed seasonally.

THE PEOPLE OF THE ABYSS

ENGLISH STOUT / 9.5% / ONCE A YEAR

A traditional English stout for which we selected the best British ingredients (malts from Thomas Fawcett & sons limited., London yeast and hops from Kent). Very dry and digest, it offers complex roasted notes (dark chocolate, iced coffee, caramel), praline/hazelnuts as well as black tea notes.
It’s inspired by the eponymous work of Jack London who studied and reported the hard-living conditions of the working class in London in the early XXth century which sadly shares too many common points which our time. Of note, he reported about the fate of two beer-related groups : hoppers from the Kent as well as London porters.
A different version is brewed every year and oscillate between English Porter & Stout.

DECLARATION SPONTANEE

HOPPY TRIPLE / 9.5% / OCCASIONAL

Our hoppy Belgian Tripel. The fruity esters from the yeast complement the profile of exotic fruits coming from the hops (Citra, Simcoe and Mosaic). Oat and wheat increases the body of the beer and bring a silky quality. It's named after a document at the center of a litigation with excises that forced us to stop production at our brewery. Therefore we had to brew the first batches of this beer at brasserie Brasse & Vous in Liège.

SOMBRA

DOUBLE BLACK IPA / 8.5% / COLLAB WITH BRASSERIE ATRIUM / ONE SHOT

A collab with our great friends from Brasserie Atrium in Marche. Brewed because we missed the black IPA days. Dry hopped with heavy load of Citra and Mosaic hops. Released at Zythos 2019 on the stand we were sharing with our friends.

JUICY²

DIPA / 8.8% / ONCE A YEAR

Juicy turned up into a DIPA by using large amount of Golden Promise malt as well as massive amounts of Citra & Mosaic hops added at three steps. Simcoe was added at the end of the boil. Over 40g/l of hops, don't blame the bartender if it's expensive, blame the hops.Brewed seasonally in extremely limited amount to maximize distribution and therefore, freshness.

JUICY

NEIPA / 5.8 / OCCASIONAL

A light, dry and refreshing New England IPA, crafted with Mosaic and Citra hops. The hops are supported by a crisp basis made of malted barley, wheat and rye.Brewed seasonally.

SAN DIEGO

WEST COAST IPA / 6.8% / ONE SHOT

Our tribute to the great West Coast IPAs that have completly shifted our way to see beer back in the days. Our version is a little bit more balance than many of the old days WCIPA to maximize drinkability. A simple mix of base and crystal malt provide just enough backbone to support the floral, citrusy and piney notes from the classic C hops from the green field of the Pacific Northwest;

ABNEGATION

BELGIAN IPA / 7.5% / ONE SHOT

One of our most special beers as it was the first brew on our new kit.

Fermented with both a Belgian Abbey yeast and an American yeast to get both the complexity and the dryness.

Dry hopped with Mosaic, Citra and Lemondrop hops.

BADEN SKIFFLE

BELGIAN IPA / 7.5% / COLLAB WITH BRASSERIE ARTISANALE DE NAMUR/ ONE SHOT

A collab with our friends from Brasserie Artisanale de Namur. Basically, we joined our forces and fused our two flagship, Eldorado and Houppe together. The malt basis and fermentation profile comes from La Houppe while the dry hopping varieties and doses comes from Eldorado.

MEURSAULT-SUR-SAMBRE

B.A. SAISON / 7.9% / ONE SHOT

One of our most special beer to date and the one that required by far the biggest effort. A blend of 4 different beers realized with locally grown organic raw wheat, spelt and rye. All cereals are cultivated by our friends at La Ferme Baré. A blend of a saison, a super saison, a belgian pale ale and a belgian tripel. All four beers were blended together after careful selection of the blending ratio and aged in a freshly emptied barrel of Burgundy barrel from Meursault (Beaune Clos Saint-Désiré). The base beer and the chardonay profile really create a unique and smooth association.Orginally brewed in 2018. Not available.

SOYOUZ

RUSSSIAN IMPERIAL STOUT / 13.7% / YEAR ROUND

Based on our Terrils Stout (Yuri), this version has a more complex roasted bouquet thanks to the addition of an additional roasted malt, Exists in several variations with coffee and cocoa.Brewed year round.

SOYOUZ²

RUSSIAN IMPERIAL STOUT / 15.3% / ONE SHOT

A version of Soyouz on steroids clocking in at 15.3% ABV which took no less than 18h to brew and which makes the classic Soyouz looks like a thirst-quenching beer. It develops a wide aromatic bouquet ranging from empyreumatic notes (coffee, dark chocolate, moka) to fruits (black fruits, red wine).

DARK WOOD

COCO STOUT / 10% / COLLAB WITH LA SOURCE BEER CO / ONE SHOT

A collab with our awesome friends from La Source beer co. A decadent imperial stout brewed with massive amount of toasted coconuts as well as a Palo Santo infusion that brings additional layers of complexity including vanilla, dried wood as well as cinamon.
